Bivalve mollusks are filter feeders, that is, they capture their food by filtering a large amounts of water, retaining particles and microorganisms. Mainly unicellular algae, however, when there is a certain degree of contamination, they concentrate it inside them several orders of magnitude higher than that found in the middle.
Depuration is a process that consists of immersing mollusks in clean seawater in such a way that the animals can resume their normal physiological activity and expel microbial contaminants from the intervalvar cavity, their gills and intestinal apparatus for a period of time, which can vary from a few hours to several days, depending on the species and its origin.
